Chocolate Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate and place it in a heatproof bowl. Add the butter. Set the bowl over a saucepan of simmering water, making sure the bottom of the bowl doesn’t touch the water. Stir occasionally until melted and smooth. Remove from heat and let cool slightly.

    Whip Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until thick and pale. This should take about 5 minutes.

    Combine Chocolate and Yolks

    Slowly pour the melted chocolate mixture into the egg yolk mixture, stirring constantly until well combined.

    Beat Egg Whites

    In a clean bowl, whip the egg whites with a pinch of salt until soft peaks form. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip the Cream

    In another bowl, whip the heavy cream with vanilla extract until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated and smooth.

    Chill the Mousse

    Spoon the mousse into serving dishes or glasses. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Garnishing

    Prepare the Garnish

    Just before serving, wash the fresh raspberries under cool water and gently pat dry with a paper towel.

    Serve

    Top each serving of chocolate mousse with a dollop of whipped cream and a handful of fresh raspberries. Serve immediately.
