Calamari

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and red pepper flakes. Mix well to create a seasoned flour mixture.

  2. 2

    Coat the Calamari

Take the cleaned and sliced calamari rings and dredge them in the seasoned flour mixture, ensuring they are well coated. Shake off any excess flour.

  3. 3

    Heat the Oil

In a large, deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

  4. 4

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and place them on a paper towel-lined plate to drain excess oil.

Spicy Anchovy Aioli Preparation

  1. 5

    Mix the Aioli

In a bowl, combine the mayonnaise, minced anchovy fillets, minced garlic, lemon juice, and hot sauce. Stir well until all ingredients are fully incorporated.

  2. 6

    Taste and Adjust

Taste the aioli and add salt as needed. Adjust the amount of hot sauce for desired spiciness.

  3. 7

    Serve

Transfer the spicy anchovy aioli to a serving bowl and serve alongside the fried calamari.
