For the Sticky Rice

Prepare the Sticky Rice

    Rinse the Rice

    Place the sticky rice in a bowl and rinse under cold water until the water runs clear. This helps remove excess starch.

    Soak the Rice

    Soak the rinsed sticky rice in water for at least 4 hours or overnight for best results.

    Cook the Rice

    Drain the soaked sticky rice and place it in a steamer basket lined with cheesecloth. Steam over boiling water for about 30 minutes or until tender.

Prepare the Black Cod Curry

    Sauté the Vegetables

    In a large pan, heat the vegetable oil over medium heat. Add the bok choy and shimeji mushrooms, sautéing for about 5 minutes until softened.

    Add the Curry Paste

    Stir in the curry paste and cook for another 2-3 minutes until fragrant.

    Add the Black Cod

    Place the black cod fillets in the pan, gently stirring to coat them in the curry mixture. Cook for about 2 minutes.

    Add Coconut Milk and Soy Sauce

    Pour in the coconut milk and soy sauce, bringing the mixture to a simmer. Cook for 10-12 minutes, or until the cod is cooked through and flakes easily with a fork.
