For the Ahi Poke

Prepare the Tuna
Cut the yellowfin tuna into 1/2-inch cubes and place them in a mixing bowl.

Add Seasonings
In the bowl with tuna, add the soy sauce, sesame oil, chopped green onions, sea salt, and red pepper flakes. Toss gently to combine.

Marinate
Let the tuna mixture marinate in the refrigerator for at least 15 minutes to allow the flavors to meld.
For the Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear.

Cook the Rice
In a pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove it from heat and let it cool slightly. Fold in the vinegar mixture gently, being careful not to mash the rice.

Assemble the Dish
To serve, place a mound of sushi rice on a plate, top with the marinated tuna, and arrange avocado slices on the side. Sprinkle sesame seeds over the top for garnish.
