Anchovy-Garlic Butter
Method
Cooking the Lobster

Prepare the Cooking Pot
In a large pot, bring 4 cups of water to a boil. Add 1 tablespoon of sea salt to the boiling water.

Cook the Lobster
Carefully add the 1.5-pound Maine lobster to the pot. Cover and cook for about 12-15 minutes, or until the lobster is bright red and the meat is opaque.

Making Anchovy-Garlic Butter

Melt the Butter
In a small saucepan, melt 1 cup of unsalted butter over low heat.

Add Anchovy and Garlic
Once the butter is melted, add 4 anchovy fillets and 3 minced garlic cloves. Stir until the anchovies dissolve and the garlic is fragrant, about 2-3 minutes.

Finish the Butter
Remove from heat and stir in 2 tablespoons of lemon juice and 2 tablespoons of chopped fresh parsley. Season with black pepper to taste.
Serving

Serve the Lobster
Crack the lobster shell and remove the meat. Arrange the lobster meat on a serving platter. Drizzle generously with the anchovy-garlic butter and serve immediately.
