Dough Preparation

Activate the Yeast

In a bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture along with the olive oil. Mix until a dough forms.

Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. Form it into a ball.

First Rise

Place the dough ball in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.

Prepare the Pan

Preheat your oven to 425°F (220°C). Grease a baking sheet or a rectangular pan with olive oil.

Shape the Dough

Once the dough has risen, punch it down and transfer it to the prepared pan. Use your fingers to stretch and press the dough into the corners of the pan.

Cover the dough in the pan with a cloth and let it rise for another 20-30 minutes until it puffs up slightly.

Use your fingers to make dimples all over the surface of the dough. Drizzle with olive oil, sprinkle sea salt, and sprinkle fresh rosemary evenly over the top.

Bake in the preheated oven for 20-25 minutes until the focaccia is golden brown on top and cooked through.

Remove from the oven and let it cool in the pan for about 10 minutes. Transfer to a wire rack to cool completely before slicing and serving.
