Cake Preparation

Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with flour, tapping out any excess.

Melt Chocolate and Butter

In a medium heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water, stirring continuously until smooth. Remove from heat and let cool slightly.

Combine Dry Ingredients

In a separate bowl, whisk together the powdered sugar, all-purpose flour, and salt until well combined.

Mix Eggs and Vanilla

In another bowl, whisk the eggs, egg yolks, and vanilla extract until frothy.

Combine Mixtures

Pour the melted chocolate mixture into the egg mixture and stir until combined. Gradually fold in the dry ingredients until just combined; be careful not to overmix.

Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

Bake the Cakes

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft. The tops should look slightly set.

Cool and Serve

Remove the cakes from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate and gently lift off the ramekin. Serve immediately with a scoop of vanilla ice cream and fresh berries if desired.
