Sandwich Preparation

Prepare the Mushrooms

Clean the Hazel Dell lion's mane mushrooms gently with a damp cloth. Slice them into thick pieces (about 1-inch thick).

Cook the Mushrooms

In a skillet over medium heat, add a tablespoon of ghee. Once hot, add the sliced mushrooms and cook for about 5-7 minutes until golden brown and tender. Season with salt and pepper to taste.

Assemble the Sandwich

Spread basil aioli on the bottom half of each brioche bun. Layer with lettuce, cooked mushrooms, house made pickles, and cover with the top half of the bun.

Prepare the Potatoes

Wash and peel the potatoes. Cut them into thin strips or wedges, about 1/4 inch thick.

Fry the Potatoes

In a large pot, heat ghee over medium-high heat. Once hot, add the garlic cloves (smashed) and let them infuse the oil for 2 minutes. Remove garlic and add the potato strips, frying until golden brown and crispy, about 8-10 minutes.

Season the Fries

Once the fries are cooked, remove from the oil and place them on a paper towel-lined plate. Immediately season with salt and black pepper while they are still hot.
