Prepare Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot, bring to a boil, then reduce to a simmer, cover, and cook for 20 minutes. Remove from heat and let it sit, covered, for 10 minutes.

Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is done, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Make Avocado Crema

In a blender, combine the avocado and lime juice. Blend until smooth and creamy. Adjust seasoning as needed.

Prepare Sriracha Dressing

In a small bowl, mix together the sriracha sauce and soy sauce. Adjust the amount of sriracha according to your spice preference.

Rehydrate Wakame

Soak the wakame in warm water for about 10 minutes until it expands and softens. Drain and set aside.

Assemble the Bowl

In a serving bowl, add a portion of sushi rice. Top with canned tuna, avocado crema, rehydrated wakame, and drizzle with sriracha dressing. Sprinkle sesame seeds on top.
