Prepare the Cajun Coleslaw
In a large bowl, combine shredded cabbage and grated carrot. In a separate bowl, mix apple cider vinegar, sugar, cajun seasoning, and mayonnaise. Pour the dressing over the cabbage mixture and toss to combine. Refrigerate for at least 30 minutes.
Prepare the Flounder
In a shallow dish, combine flour, cornmeal, cajun seasoning, salt, and black pepper. In another bowl, whisk eggs and buttermilk together. Dip each flounder fillet in the buttermilk mixture, then coat with the flour mixture.
Fry the Flounder
Heat vegetable oil in a large skillet over medium-high heat. Fry the coated flounder fillets in batches for about 3-4 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
Assemble the Sandwiches
Toast the brioche buns. Spread mayonnaise on the bottom half of each bun. Place a fried flounder fillet on top, then add pickles, tomato slices, and a generous scoop of cajun coleslaw. Top with the other half of the bun.
