Prepare the Mango Salsa

In a bowl, combine the diced mango, red onion, cilantro, lime juice, salt, and black pepper. Mix well and set aside to let the flavors meld.

Season the Mahi Mahi

Pat the Mahi Mahi fillets dry with paper towels. Rub Cajun seasoning generously over both sides of each fillet. Drizzle with olive oil.

Cook the Mahi Mahi

Heat a skillet over medium-high heat. Once hot, add the fillets and cook for about 3-4 minutes on each side or until the fish is cooked through and has a blackened crust.
