1. Prepare the Clams
Rinse the fresh clams under cold water to remove any sand or debris. Place them in a large pot with enough water to cover them. Bring to a boil, then reduce the heat and let simmer until the clams open (about 5-7 minutes). Discard any clams that do not open.
2. Sauté the Vegetables
In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent (about 5 minutes).
3. Add Potatoes and Clam Juice
Add the diced potatoes to the pot and pour in the clam juice. Bring to a simmer and cook until the potatoes are tender (about 15 minutes).
4. Combine Ingredients
Once the potatoes are tender, add the cooked clams (remove from shells if desired), heavy cream, and fresh dill. Stir to combine and let heat through (about 5 minutes).
5. Season and Serve
Season the chowder with salt and black pepper to taste. Serve hot, garnished with additional fresh dill if desired.
