Grilled Chicken Breast
Prepare the Chicken
In a bowl, mix olive oil, garlic powder, paprika, cumin, salt, and black pepper. Coat the chicken breasts with this mixture and let them marinate for at least 30 minutes.
Grill the Chicken
Preheat the grill to medium-high heat. Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked and juices run clear.
Mexican Street Corn
Prepare the Corn
Grill the corn on the cob for about 10-15 minutes, turning occasionally until charred.
Coat the Corn
In a bowl, combine mayonnaise, cotija cheese, chili powder, lime juice, and chopped cilantro. Once the corn is grilled, generously coat it with the mixture.
Roasted Sweet Potatoes
Prepare the Sweet Potatoes
Preheat the oven to 425°F (220°C). Peel and cube the sweet potatoes. Toss them with olive oil, salt, black pepper, and cinnamon.
Roast the Sweet Potatoes
Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender and golden brown.
