Method

For the Beer-Battered Flounder

  1. 1

    Prepare the Batter

In a mixing bowl, whisk together flour, baking powder, salt, and black pepper. Gradually add the beer, mixing until smooth.

  2. 2

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

  3. 3

    Fry the Fish

Dip the flounder fillets into the batter, then carefully place them in the hot oil. Fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.

For the Apple Cider Slaw

  1. 4

    Mix the Slaw

In a large bowl, combine shredded cabbage and carrot. In a separate bowl, whisk together apple cider vinegar, mayonnaise, honey, salt, and black pepper. Pour the dressing over the cabbage mixture and toss to combine. Refrigerate until serving.

For the Tartar Sauce

  1. 5

    Combine Ingredients

In a small bowl, mix together mayonnaise, dill pickle relish, lemon juice, capers (if using), salt, and black pepper. Refrigerate until serving.

For the Fries

  1. 6

    Prepare the Fries

Cut potatoes into fries. Heat oil in a large pot or deep fryer to 350°F (175°C). Fry potatoes until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt.
