Method

Biscuits

  1. 1

    Prepare the Dough

Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut with a biscuit cutter.

  2. 2

    Bake the Biscuits

Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.

Sausage Gravy

  1. 3

    Cook the Sausage

In a large skillet, cook the ground sausage over medium heat until browned. Break it apart as it cooks.

  2. 4

    Make the Gravy

Sprinkle the flour over the sausage and stir to combine. Slowly add the milk, cooking until the gravy thickens. Season with black pepper and salt to taste.

Poached Eggs

  1. 5

    Poach the Eggs

Bring a pot of water to a simmer and add vinegar. Crack each egg into a small bowl, then gently slide into the water. Cook for 3-4 minutes until whites are set and yolks are still runny.

Collard Greens

  1. 6

    Cook the Collards

In a large pot, combine the collard greens, ham hocks, chicken broth, chopped onion, and minced garlic. Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour until greens are tender. Season with salt to taste.

Home Fries

  1. 7

    Prepare the Potatoes

Dice the potatoes and rinse under cold water. In a skillet, heat olive oil over medium heat. Add diced potatoes and chopped onion, and season with salt and pepper.

  2. 8

    Cook the Fries

Cook for 15-20 minutes, stirring occasionally, until potatoes are golden and crispy.
