    Make the Pasta Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and crack in the eggs and olive oil. Use a fork to beat the eggs, gradually incorporating the flour from the edges of the well until a dough forms.

    Knead the Dough

    Transfer the dough to a lightly floured surface. Knead the dough for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

FILLING

    Prepare the Beef Filling

    In a large pot, sear the beef short ribs over medium-high heat until browned on all sides. Remove and set aside. In the same pot, add the chopped onion and garlic, sauté until translucent.

    Cook the Beef

    Return the short ribs to the pot, add thyme, salt, and black pepper. Cover with water and simmer for about 2-3 hours until the meat is tender. Remove the beef, shred it, and return to the pot to mix with some of the cooking liquid. Let cool slightly.

GARNISH

    Prepare the Shallots

    In a skillet, melt the butter over medium heat. Add the sliced shallots and cook until golden brown and crispy. Remove and drain on paper towels.

    Make the Brown Butter and Red Wine Jus

    In the same skillet, add red wine and beef stock to deglaze, scraping up any browned bits. Simmer until reduced by half. Stir in the browned butter and season with salt and pepper to taste.
