Select ripe red grapes (preferably Agiorgitiko) in the vineyard. Make sure they are free from rot and other imperfections.

Harvesting the Grapes

Once harvested, crush the grapes and remove the stems. This can be done manually or using a grape crusher. Aim for a mash that is juicy but not overly pulverized.

Crushing and Destemming

Transfer the crushed grapes (including skins) into a fermentation vessel. Add 5 liters of water to the mixture.

Fermentation

Dissolve 2 kg of sugar in a small amount of warm water and add it to the fermentation vessel. Sprinkle 20g of yeast over the mixture and stir gently to combine.

Adding Sugar and Yeast

If desired, add 5g of tannin to enhance the wine's structure and complexity.

Optional Tannin Addition

Cover the fermentation vessel with a cloth and let it sit for about 7-10 days. Stir the mixture daily to ensure even fermentation and extraction of flavors from the grape skins.

Monitoring Fermentation

After fermentation, press the mixture to separate the liquid wine from the solid grape skins. Collect the pressed juice in a clean container.

Pressing

To stabilize the wine and prevent spoilage, add 10g of sulfites to the pressed wine.

Adding Sulfites

Transfer the wine into oak barrels or stainless steel tanks for aging. Allow it to age for at least 6 months to develop its flavors.

Aging

After aging, filter the wine and transfer it into clean bottles. Seal with corks and label appropriately.
