Select and hand-harvest ripe Riesling grapes from the vineyard, ensuring that they are in perfect condition for winemaking.

Harvesting the Grapes

Crush the harvested grapes gently to release their juice. Place the crushed grapes into a press and extract the juice, discarding the skins and stems.

Crushing and Pressing

Measure the extracted grape juice and add water if necessary to achieve the desired volume. If adjusting sweetness, dissolve the sugar in a small amount of warm water and add it to the grape juice.

Juice Preparation

Sprinkle the yeast over the grape juice and stir gently to mix. Cover the fermentation vessel with a clean cloth and allow the mixture to ferment at a stable temperature (around 18-20°C) for about 2-3 weeks.

Fermentation

After fermentation, test the acidity of the wine. If necessary, dissolve tartaric acid in a small amount of water and add it to the wine to adjust the acidity to your preference.

Acidity Adjustment

Once fermentation is complete, siphon the wine off the sediment into a clean fermentation vessel, ensuring no sediment is transferred.

Racking

Age the wine in a cool, dark place for a minimum of 6 months to develop its flavors. During this time, you can taste the wine periodically to monitor its development.
