    Cook the Tagliatelle

    Bring a large pot of salted water to a boil. Add the tagliatelle and cook according to package instructions, usually about 8-10 minutes until al dente. Reserve 1 cup of pasta water before draining.

    Add Olive Oil

    Once drained, drizzle with olive oil and toss to prevent sticking. Set aside.

LAMB RAGU

    Prepare the Lamb

    In a large pot, heat a drizzle of olive oil over medium heat. Season the lamb shoulder with salt and black pepper. Sear the lamb on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, carrot, and celery. Sauté for about 5 minutes until softened. Add minced garlic and sauté for another minute.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow the wine to simmer for about 2-3 minutes.

    Add Remaining Ingredients

    Stir in the tomato paste, crushed tomatoes, oregano, thyme, bay leaf, and return the lamb to the pot. Bring to a gentle simmer.

    Slow Cook the Ragu

    Cover and cook on low heat for 2 hours, until the lamb is tender and shreds easily. Remove the lamb, shred it with two forks, and return the meat to the sauce. Adjust seasoning to taste.

CRISPY GUANCIALE

    Crisp the Guanciale

    In a pan over medium heat, add the guanciale slices. Cook until crispy and golden brown, about 5-7 minutes. Remove and drain on paper towels.

TO SERVE

    Combine and Serve

    In a large serving bowl, combine the tagliatelle and lamb ragu. Toss well, adding reserved pasta water as needed to create a smooth sauce. Top with crispy guanciale, freshly grated manchego cheese, and a handful of fresh basil.
