    Prepare the Ribs

    Season the beef short ribs generously with salt and black pepper on all sides.

    Sear the Ribs

    In a large skillet, heat olive oil over medium-high heat. Add the seasoned short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes. Add minced garlic and cook for an additional 1 minute.

    Deglaze the Pan

    Pour in the red wine and scrape the bottom of the skillet to release any browned bits. Bring to a simmer and cook for 2-3 minutes.

    Combine Ingredients in Slow Cooker

    Transfer the sautéed vegetables and deglazing liquid to a slow cooker. Add the seared short ribs, beef broth, bay leaves, and thyme. Stir to combine.

    Slow Cook

    Cover the slow cooker and cook on low for 6-8 hours, or until the ribs are tender and falling off the bone.

    Serve

    Remove the ribs from the slow cooker and let them rest for a few minutes. Serve with the cooking liquid and vegetables.
