Prepare the Broth
In a large pot, add the coconut milk and 400 ml of water. Bring to a gentle simmer over medium heat.

Add Aromatics
Once the coconut milk is simmering, add the bruised lemongrass stalks, kaffir lime leaves, and sliced galangal root to the pot. Let it simmer for about 10 minutes to infuse the flavors.

Cook the Chicken
Add the sliced chicken breast to the pot. Stir well and let it cook for about 5-7 minutes until the chicken is fully cooked and tender.

Season the Soup
Stir in the fish sauce and, if desired, the sliced chili peppers for added heat. Let the soup simmer for an additional 2-3 minutes.

Serve
Remove the pot from heat. Ladle the soup into bowls, garnish with chopped cilantro, and serve with lime wedges on the side.
