Prepare the Broth
In a large pot, add the pork bones and water. Bring to a boil over high heat.

Once boiling, reduce the heat to low and skim off any foam that rises to the surface.

Add the ginger, garlic, soy sauce, fish sauce, sugar, star anise, and cinnamon stick.

Cover the pot and let it simmer for at least 1.5 hours, stirring occasionally.

After 1.5 hours, remove the pork bones and strain the broth to remove solids. Season with salt to taste.
Noodle Assembly

In the same pot, briefly blanch the sliced pork tenderloin in boiling water until just cooked. Remove and set aside.

To serve, divide the cooked noodles into bowls, top with the cooked pork, and ladle the hot broth over them.
