Preparing the Filling

    Cook the Chicken

    In a pan over medium heat, add the ground chicken. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

    Sauté the Vegetables

    In the same pan, add the minced garlic and chopped onion. Sauté until the onion is translucent, about 3-4 minutes. Then add the shredded cabbage and carrots. Cook for another 3 minutes until soft.

    Combine Ingredients

    Add the cooked chicken back into the pan. Stir in the soaked glass noodles, soy sauce, sesame oil, salt, and black pepper. Mix well and cook for 2-3 minutes. Remove from heat and let it cool slightly.

Assembling the Spring Rolls

    Prepare the Wrapper

    Lay a spring roll wrapper on a clean, flat surface with one corner pointing towards you.

    Fill the Wrapper

    Place about 2 tablespoons of the filling on the lower third of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly until closed. Seal the edge with a little water.

    Repeat

    Repeat the filling and rolling process for the remaining wrappers and filling.

Frying the Spring Rolls

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Rolls

    Carefully add the spring rolls to the hot oil, a few at a time to avoid overcrowding. Fry for 3-4 minutes or until golden brown and crispy.

    Drain and Serve

    Remove the spring rolls from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with sweet chili sauce or your favorite dipping sauce.
