Marinade

Peanut Sauce

Method

Marinade Preparation

  1. 1

    Prepare the Marinade

In a large mixing bowl, combine soy sauce, peanut butter, honey, minced garlic, grated ginger, lime juice, cayenne pepper, salt, and black pepper. Mix thoroughly until the marinade is smooth and well-blended.

  2. 2

    Marinate the Chicken

Cut the chicken breasts into bite-sized pieces or strips and add them to the marinade. Ensure all pieces are coated well. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour, preferably overnight for enhanced flavor.

Grilling

  1. 3

    Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. This step is optional if using metal skewers.

  2. 4

    Skewer the Chicken

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

  3. 5

    Preheat the Grill

Preheat your grill to medium-high heat and lightly brush the grates with vegetable oil to prevent sticking.

  4. 6

    Grill the Chicken

Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Check for doneness by ensuring the internal temperature reaches 75°C (165°F).

Peanut Sauce Preparation

  1. 7

    Make the Peanut Sauce

In a small saucepan over medium heat, combine peanut butter, soy sauce, water, lime juice, and sugar. Stir continuously until the mixture is smooth and heated through. Adjust the consistency with more water if needed. Add sriracha sauce to taste for a spicy kick.

Serving

  1. 8

    Serve the Satay Chicken

Remove the chicken skewers from the grill and let them rest for a few minutes. Serve the skewers with the peanut sauce on the side for dipping. Enjoy your delicious Satay Chicken!
