Prepare the Prawn Mixture
In a food processor, blend the prawn meat until smooth.

Mix Dry Ingredients
In a mixing bowl, combine tapioca flour, rice flour, and salt.

Combine Mixtures
Add the blended prawn meat and water to the dry ingredient mixture. Stir until a dough forms.

Shape the Dough
Roll the dough into a log shape, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Slice and Dry
After chilling, slice the log into thin rounds and arrange them on a tray. Let them air dry for a few hours or until completely dry.

Fry the Crackers
Heat vegetable oil in a deep pan. Fry the dried slices in batches until they puff and become golden brown. Drain on paper towels.
Sweet Chili Sauce

Combine Ingredients
In a saucepan, mix sugar, water, rice vinegar, and chili flakes. Bring to a boil over medium heat.

Create the Slurry
In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry.

Thicken the Sauce
Once the sauce is boiling, stir in the garlic and the cornstarch slurry. Cook for an additional 2-3 minutes until the sauce thickens.

Cool and Serve
Remove from heat and let the sauce cool before serving with the prawn crackers.
