Preparation

Soak Noodles
Soak the rice noodles in warm water for about 20-30 minutes until they are softened. Drain and set aside.

Chop Vegetables
Thinly slice the green onions, finely chop the garlic, and julienne the carrot.

Prepare Sauce
In a small bowl, mix together soy sauce, fish sauce, tamarind paste, sugar, and chili powder. Stir until sugar is dissolved and set aside.
Cooking

Cook Prawns
Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium-high heat. Add the prawns and stir-fry for 2-3 minutes until they turn pink and are cooked through. Remove from the pan and set aside.

Sauté Vegetables
In the same pan, add another tablespoon of vegetable oil. Add garlic and sauté for about 30 seconds until fragrant. Then add the sliced carrots and sauté for 2-3 minutes.

Combine Ingredients
Add the soaked rice noodles to the pan, followed by the prepared sauce. Toss everything together and cook for an additional 2-3 minutes.

Add Prawns and Bean Sprouts
Return the cooked prawns to the pan along with the bean sprouts and half of the green onions. Stir-fry for another 1-2 minutes until heated through.

Serve
Remove from heat, transfer to serving plates, and garnish with the remaining green onions, roasted peanuts, fresh cilantro, and lime wedges.
