    Prepare the Ingredients

    If using chicken, cut it into bite-sized pieces. If using tofu, press it to remove excess water and cut into cubes. Slice the bell peppers, zucchini, and carrot into thin strips.

    Gather Seasonings

    Measure out the fish sauce, sugar, and lime juice. Set aside for later use.

Cooking

    Cook the Protein

    In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the chicken or tofu and cook until browned and cooked through (about 5-7 minutes for chicken, 8-10 minutes for tofu). Remove from the skillet and set aside.

    Add Vegetables

    In the same skillet, add a little more oil if needed. Add the sliced bell peppers, zucchini, and carrots. Stir-fry for about 3-4 minutes until they are slightly tender but still crisp.

    Combine Ingredients

    Add the green curry paste to the vegetables and stir well, cooking for another 1-2 minutes until the paste is fragrant.

    Add Coconut Milk

    Pour in the coconut milk and bring to a simmer. Stir to combine the curry paste with the coconut milk.

    Finish the Curry

    Return the cooked chicken or tofu to the skillet. Add the fish sauce, sugar, and lime juice. Stir well and let it simmer for another 5 minutes to allow the flavors to meld.

Serving

    Garnish and Serve

    Serve the green curry hot, garnished with fresh basil leaves, sliced chili peppers (if using), and lime wedges on the side.
