Prepare the Shrimp Filling
In a mixing bowl, combine the peeled and deveined shrimp, minced garlic, salt, black pepper, beaten egg, and chopped green onion. Mix well until all ingredients are evenly incorporated.

Wrap the Shrimp
Take one spring roll sheet and lay it flat on a clean surface. Place a spoonful of the shrimp mixture at one edge of the sheet. Fold the sides over the filling and roll tightly from the edge with the filling, sealing the end with a little cornstarch mixed with water to hold it together. Repeat with the remaining sheets and shrimp mixture.

Fry the Wrapped Shrimp
In a deep frying pan or wok, heat the vegetable oil over medium-high heat. Once the oil is hot (around 180°C or 350°F), carefully place the wrapped shrimp in the oil, a few at a time to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve the Goong Todd hot with your choice of dipping sauce, like sweet chili sauce or peanut sauce.
