Method
Preparation of Fresh Spring Rolls
- 1
Prepare the Ingredients
Gather all the ingredients needed for the fresh spring rolls. Ensure the shrimp is cooked and peeled, and the vegetables are washed and julienned.
- 2
Soften the Rice Paper Wrappers
Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 15-20 seconds, or until it is softened but not falling apart. Remove and lay flat on a clean surface.
- 3
Assemble the Rolls
On the softened rice paper, place a lettuce leaf. Add a small amount of rice noodles, followed by a few pieces of shrimp, carrots, bean sprouts, Thai basil, and cilantro. Be careful not to overfill.
- 4
Roll the Spring Roll
Fold the sides of the rice paper over the filling, then tightly roll from the bottom to the top. Repeat the process with the remaining ingredients.
Preparation of Peanut Sauce
- 5
Mix the Sauce Ingredients
In a bowl, combine peanut butter, soy sauce, water, rice vinegar, honey (or sugar), and minced garlic. Stir well until smooth.
- 6
Adjust the Flavor
Taste the peanut sauce and add chili sauce if you prefer a spicy kick. Adjust water for desired consistency.
