Prepare the Filling

Cook the Rice Noodles
Bring a pot of water to a boil. Add the rice noodles and cook according to the package instructions, usually 3-5 minutes. Drain and rinse under cold water, then set aside.

Prepare the Tofu
Drain the tofu and press it between paper towels to remove excess moisture. Cut it into thin strips or small cubes. Optionally, you can sauté the tofu in a non-stick pan with a little oil until golden brown for added flavor.

Rinse the Bean Sprouts
Rinse the bean sprouts under cold water and drain well.

Prepare the Herbs
Wash the cilantro and pat dry. Remove the leaves from the stems.
Assemble the Spring Rolls

Soften the Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes pliable. Remove and place it on a clean surface.

Add the Filling
Place a leaf of lettuce on the lower third of the rice paper. Add a small amount of rice noodles, tofu, shredded carrot, bean sprouts, and cilantro on top of the lettuce.

Roll the Spring Roll
Fold the sides of the rice paper over the filling, then roll it away from you tightly. Repeat this process with the remaining rice paper wrappers and filling.
Prepare the Peanut Sauce

Mix the Sauce Ingredients
In a small mixing bowl, combine peanut butter, soy sauce, lime juice, water, honey or agave syrup, minced garlic, and chili flakes. Whisk together until smooth and well combined.

Adjust Consistency
If the sauce is too thick, add a little more water until the desired consistency is reached.
