Preparing the Chicken Satay

    Marinate the Chicken

    In a bowl, combine soy sauce, coconut milk, brown sugar, lime juice, minced garlic, grated ginger, and cayenne pepper. Whisk until well mixed.

    Add Chicken

    Cut the boneless chicken thighs into strips and add them to the marinade. Make sure the chicken is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Soak Skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning on the grill.

    Skewer the Chicken

    Once marinated, thread the chicken strips onto the skewers, leaving a little space between each piece.

Cooking the Chicken Satay

    Preheat Grill

    Preheat your grill or grill pan to medium-high heat.

    Place the chicken skewers on the grill. Cook for about 5-7 minutes on each side or until the chicken is cooked through and has nice grill marks.

Preparing the Peanut Sauce

    Mix Peanut Sauce Ingredients

    In a small saucepan, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, chili garlic sauce, and water. Cook over medium heat, stirring until smooth and well combined.

    Adjust Consistency

    If the sauce is too thick, add a bit more water until desired consistency is reached.

    Serve the grilled chicken satay hot with the peanut sauce on the side for dipping.
