Spaghetti Carbonara Recipe

Cook Pasta

    Boil Water

    In a large pot, bring 4 liters of water to a boil. Add 1 tablespoon of salt to the boiling water.

    Cook Spaghetti

    Add 400 grams of spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the spaghetti, reserve about 1 cup of pasta water. This will help adjust the sauce consistency later.

    Drain Pasta

    Drain the spaghetti in a colander and set aside.

Prepare Sauce

    Cook Pancetta

    In a large skillet over medium heat, add 150 grams of diced pancetta. Cook until crispy and golden, about 4-5 minutes.

    Whisk Eggs and Cheese

    In a mixing bowl, whisk together 4 large eggs and 100 grams of grated Parmesan cheese until well combined. Season with black pepper to taste.

Combine Ingredients

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the pancetta (off the heat) and toss to combine.

    Add Egg Mixture

    Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve

    Garnish and Serve

    Serve immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
