Cooking Pasta

    Boil Water

    In a large pot, bring water to a boil over high heat. Add 1 tablespoon of salt to the boiling water.

    Cook Pasta

    Add 12 oz of pasta to the boiling water. Cook according to package instructions until al dente. Once cooked, drain the pasta and set aside, reserving 1 cup of the pasta water.

Sautéing Vegetables

    Heat Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add 2 minced garlic cloves to the skillet and sauté for about 1 minute until fragrant, being careful not to burn them.

    Add Vegetables

    Add the chopped bell peppers, sliced zucchini, halved cherry tomatoes, sliced carrots, and broccoli florets to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

Combining Ingredients

    Mix Pasta and Vegetables

    Add the cooked pasta to the skillet with the sautéed vegetables. Toss to combine.

    Add Seasoning

    Pour in the reserved pasta water as needed to help combine. Season with 1 teaspoon of black pepper and stir well. If desired, add more salt to taste.

    Finish with Cheese and Basil

    Remove from heat and stir in 1 cup of grated Parmesan cheese and 1 cup of chopped fresh basil until combined. Serve immediately.
