Cut the beef fat into small pieces and render it down in a pan over low heat until it melts and becomes liquid fat. Strain the fat to remove any solid bits.

Peel the potatoes and cut them into thick chips or wedges. Soak them in cold water for at least 30 minutes to remove excess starch.

Heat the rendered beef fat in a deep pan or fryer to 160°C (320°F). Fry the soaked potato chips in batches for about 5-7 minutes until they are tender but not browned. Remove and drain on paper towels.

Allow the chips to cool completely for about 30 minutes.

Increase the temperature of the beef fat to 190°C (375°F). Fry the cooled chips in batches for an additional 3-5 minutes until they are golden brown and crispy. Remove and drain again on paper towels.

Immediately sprinkle the hot chips with salt, black pepper, paprika, and garlic powder. Toss to coat evenly.
