Preparing the Steak

Season the Steak

Rub the bone-in cowboy steak with olive oil, pastrami seasoning, orange zest, salt, and black pepper. Let it rest at room temperature for about 30 minutes.

Grill the Steak

Preheat the grill to high heat. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let rest.

Cooking the Asparagus

Pan-Fry the Asparagus

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add asparagus, season with salt and pepper, and cook for about 5-7 minutes, until tender-crisp.

Making the Sauce

Prepare the Apple Sauce

In a saucepan, combine diced apple, organic apple cider, brown sugar, and cinnamon. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until apples are soft. Stir in butter until melted.

Plating

Serve the Dish

On a plate, lay the pan-fried asparagus, top with the grilled cowboy steak, and drizzle the fire-roasted apple and organic cider sauce over the top.
