Prepare the Gnocchi
Bring a large pot of salted water to a boil. Add the potato gnocchi and cook until they float to the top, about 2-3 minutes. Drain and set aside.

Grill the Radicchio
Preheat a grill or grill pan over medium heat. Cut the radicchio into quarters and grill for about 2-3 minutes on each side until charred and tender. Remove and set aside.

Cook the Sausage
In a large skillet, cook the homemade sausage over medium heat until browned and cooked through. Remove from the skillet and chop into bite-sized pieces.

Prepare the Breadcrumbs
In the same skillet, add the breadcrumbs and toast them until golden brown. Remove from heat and set aside.

Make the Sauce
In a saucepan, combine salted lemon stock (or chicken broth) with heavy cream. Bring to a simmer and let it reduce slightly.

Combine and Serve
Add the cooked gnocchi to the sauce, toss gently to coat. Serve on a plate topped with grilled radicchio, chopped sausage, toasted breadcrumbs, and freshly grated mature sheep’s cheese. Garnish with flat Italian parsley.
