    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are deep golden brown, about 30-40 minutes.

    Add Garlic and Deglaze

    Stir in the minced garlic and cook for an additional minute. Pour in the white wine and scrape up any browned bits from the bottom of the pot. Allow to simmer for 5 minutes.

    Combine Broth and Seasonings

    Add the beef broth, thyme, bay leaves, salt, and black pepper. Bring the mixture to a boil, then reduce heat and let it simmer uncovered for about 30 minutes.

    Prepare the Bread

    While the soup is simmering, preheat your oven to 350°F (175°C). Arrange the baguette slices on a baking sheet and toast in the oven until golden brown, about 10-15 minutes.

    Serve the Soup

    Remove the bay leaves from the soup. Ladle the hot soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and sprinkle generously with Gruyère cheese.

    Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown. Serve immediately.
