Prepare the Green Tomatoes
Slice the green tomatoes into 1/2 inch thick slices. Sprinkle with salt and let them sit for 15 minutes to draw out excess moisture. Pat dry with paper towels.

Make the Crust
In a bowl, combine cornmeal, flour, chopped green onions, roasted pecans, salt, and pepper. Mix well.

Prepare the Dressing
In a blender, combine buttermilk, roasted garlic, honey, salt, and pepper. Blend until smooth. Adjust seasoning as needed.

Coat the Tomatoes
Dip each slice of green tomato into the buttermilk dressing, then coat with the cornmeal mixture, pressing gently to adhere.

Fry the Tomatoes
Heat oil in a skillet over medium heat. Fry the coated green tomatoes in batches until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
