Prepare the BBQ Sauce

    Make the Guinness BBQ Sauce

    In a saucepan, combine the Guinness stout, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, and smoked paprika. Bring the mixture to a simmer over medium heat, stirring occasionally.

    Thicken the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, or until it thickens. Stir occasionally to prevent sticking. Once thickened, remove from heat and set aside.

Prepare the Burger Patties

    Form the Patties

    In a mixing bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined, then divide the mixture into two equal portions and shape them into patties.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness, or until they reach your desired level of doneness.

    Add Cheese

    During the last minute of cooking, place a slice of cheddar cheese on each patty and cover to melt.

    While the patties are cooking, wash and chop the lettuce, slice the tomato, and slice the onion into rings.

    If using store-bought onion straws, have them ready. If making homemade, slice an onion into thin rings, dip in flour, and fry until golden brown.

Assemble the Burger

    Build the Big Ped's

    Toast the burger buns lightly on the grill or skillet. Start by placing one patty on the bottom bun, followed by lettuce, tomato, onion, a generous amount of Guinness BBQ sauce, and then the second patty. Top with onion straws and place the top bun on.
