Method

Prepare the Haddock

Season the Haddock

Preheat your oven to 400°F (200°C). Season the haddock fillets with salt, black pepper, and lemon juice. Set aside to marinate for about 15 minutes.

Prepare the Breadcrumb Mixture

In a bowl, combine breadcrumbs, grated Parmesan cheese, chopped parsley, and olive oil. Mix until the breadcrumbs are evenly coated with oil.

Coat the Haddock

Place the marinated haddock fillets on a baking sheet lined with parchment paper. Press the breadcrumb mixture onto the top of each fillet so that they are well coated.

Bake the Haddock

Bake the haddock in the preheated oven for 15-20 minutes, or until the fish is cooked through and the breadcrumb topping is golden brown.

Prepare House Rice

Cook the Rice

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of rice, 1 tablespoon of butter, and 1 teaspoon of salt. Reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and water is absorbed.

Prepare Broccoli

Sauté Broccoli

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add broccoli florets and sauté for 5-7 minutes until tender, seasoning with salt to taste.

Make Parsley Cream Sauce

Prepare the Sauce

In a small saucepan, combine 1 cup of heavy cream, 1 tablespoon of chopped parsley, 1 teaspoon of minced garlic, and season with salt and black pepper to taste. Heat over low-medium heat until warmed through, stirring occasionally.

Serve

Plate the Dish

On each plate, serve a portion of baked haddock, a scoop of house rice, and sautéed broccoli drizzled with parsley cream sauce. Enjoy your meal!
