Pudding Preparation

Prepare the Dates
In a bowl, combine the pitted dates and boiling water. Let them soak for about 20 minutes until softened.

Cream Butter and Sugar
In a mixing bowl, cream together 1 cup of unsalted butter and 1 cup of brown sugar until light and fluffy.

Add Eggs and Vanilla
Beat in the 2 large eggs, one at a time, followed by 2 tsp of vanilla extract until well combined.

Combine Dry Ingredients
In a separate bowl, sift together 1 cup of all-purpose flour, 1 tsp of baking powder, and 1 tsp of salt.

Mix Everything Together
Gradually add the dry ingredients to the wet mixture. Then, fold in the soaked dates along with the soaking water until just combined.

Bake the Pudding
Preheat the oven to 350°F (175°C). Pour the batter into a greased baking dish and bake for 30-35 minutes or until a toothpick inserted comes out clean.

Make the Sauce
In a saucepan, combine 1 cup of unsalted butter, 1 cup of brown sugar, and 1 cup of heavy cream over medium heat.

Serve with Pudding
Once the pudding is baked, let it cool for a few minutes. Cut into squares and serve warm, drizzled with the toffee sauce.
