Smash Burgers

Prepare the Beef
Divide the ground beef into 4 equal portions, gently forming them into balls without overworking the meat.

Cook the Burgers
Place the beef balls on the hot surface and smash them down with a spatula to form patties about 1/2 inch thick. Season with salt and black pepper. Cook for about 3 minutes until a crust forms.

Add Cheese
Flip the patties, add a slice of American cheese on each, and cook for another 1-2 minutes until the cheese melts.

Assemble the Burgers
Place the cooked patties on the bottom half of the buns, and top with pickles, lettuce, tomato slices, and onion rings. Cover with the top half of the bun.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into fries, about 1/4 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and pat them dry.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the dried fries to the hot oil in batches. Fry for 5-7 minutes until golden and crispy. Remove and drain on paper towels. Season with salt.
House Made Ketchup

Mix Ingredients
In a bowl, combine the tomato paste, apple cider vinegar, brown sugar, onion powder, garlic powder, salt, and black pepper.

Blend and Adjust
Stir the mixture until well combined. Taste and adjust seasoning as desired. If too thick, add a little water to reach desired consistency.
