Method
Preparation of Shrimp

Prepare the Shrimp
In a bowl, combine the Cajun seasoning with flour and cornmeal.

Set Up Breading Stations
In another bowl, whisk together the eggs and buttermilk. Dip each shrimp into the egg mixture, then dredge in the flour mixture, ensuring they are coated well.
Frying the Shrimp

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches and fry for 3-4 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
Making the Remoulade

Combine Ingredients
In a mixing bowl, combine mayonnaise, Dijon mustard, hot sauce, lemon juice, minced garlic, paprika, salt, and pepper. Mix well until smooth. Adjust seasoning to taste.
Assembling the Po' Boy

Prepare the Bread
Slice the French bread or hoagie rolls lengthwise, leaving one side attached.

Build the Sandwich
Spread a generous amount of spicy remoulade on the inside of the bread. Layer shredded lettuce, sliced tomatoes, and the fried shrimp.

Serve
Drizzle additional remoulade on top if desired, close the sandwich, and serve immediately.
