Preparation of Eggs

Boil the Eggs
Place the large eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to medium and cook for 6-7 minutes for a slightly soft yolk. After cooking, transfer the eggs to an ice bath to cool for 5 minutes, then peel and set aside.

Prepare the Sausage Mixture
In a mixing bowl, combine the sage sausage, salt, black pepper, and dried sage. Mix thoroughly until well blended.
Coating

Prepare the Coating
In three separate shallow bowls, set up your breading station. The first bowl contains the all-purpose flour, the second bowl contains the beaten egg, and the third bowl contains the panko breadcrumbs.
Assembling Scotch Eggs

Wrap the Eggs
Take a boiled egg and roll it in the flour to coat it lightly. Then, take a portion of the sausage mixture and flatten it in your palm. Place the egg in the center and carefully wrap the sausage around the egg, ensuring it is fully covered. Repeat for all eggs.
Frying

Fry the Scotch Eggs
Heat vegetable oil in a deep frying pan or pot over medium-high heat. Once the oil reaches 180°C (350°F), carefully lower the sausage-wrapped eggs into the oil. Fry for about 6-8 minutes or until golden brown and cooked through, turning occasionally for even cooking. Remove and place on a paper towel to drain excess oil.
