House Fries

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into fries of even thickness.

Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the fries in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt to taste.
Guinness BBQ Pulled Pork

Prepare the Pork
Season the pork shoulder with salt and black pepper. Place it in a slow cooker.

Add Ingredients
Chop the onion and garlic, then add them to the slow cooker along with the Guinness beer and BBQ sauce.

Cook the Pork
Cover and cook on low for 8 hours or until the pork is tender and shreds easily with a fork. Shred the pork and mix it with the sauce.
Bourbon Gravy

Add Bourbon and Broth
Slowly whisk in the bourbon and chicken broth. Continue to whisk until smooth and bring to a simmer.

Season the Gravy
Add salt and black pepper to taste. Cook until the gravy thickens, about 5-10 minutes.

Assemble the Poutine
Place a generous serving of house fries on a plate. Top with pulled pork, cheese curds, and drizzle with bourbon gravy. Serve immediately.
