    Prepare the Ingredients

    Start by washing and chopping the vegetables. Dice the bell pepper and onion into small pieces and chop the spinach. Set aside.

    Whisk the Eggs

    In a mixing bowl, crack the 3 large eggs and add 2 tablespoons of milk. Add 1 teaspoon of salt and 1 teaspoon of black pepper. Whisk until the mixture is well combined and slightly frothy.

    Cook the Vegetables

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Add the diced bell pepper and onion. Sauté for about 3-4 minutes until they are soft and translucent. Then add the chopped spinach and cook for an additional 1-2 minutes until wilted.

    Add the Egg Mixture

    Pour the egg mixture over the cooked vegetables in the skillet. Gently stir with a spatula to combine the ingredients. Allow the mixture to cook undisturbed for about 2-3 minutes until the edges start to set.
