Prepare the Corned Beef
If using pre-cooked corned beef, skip to the next step. If using raw corned beef, place it in a pot of cold water, cover, and simmer on low heat for about 3 hours or until tender. Allow it to cool slightly before slicing.

Slice the Corned Beef
Using a sharp knife, slice the corned beef against the grain into thin slices for optimal tenderness.
Assembling the Sandwich

Prepare the Bread
Lay out 4 slices of Pullman bread on a clean surface. These will be the bottom half of the sandwiches.

Add the Corned Beef
Evenly distribute the sliced corned beef onto the 4 slices of bread.

Add Swiss Cheese
Place a slice (or two) of Big Eye Swiss cheese on top of the corned beef on each sandwich.

Spread the Condiments
In a small bowl, mix together the pub mayo and Dijon mustard. Spread this mixture evenly on the remaining 4 slices of Pullman bread.

Complete the Sandwiches
Top the sandwiches with the condiment-coated slices of Pullman bread, mayo side down.

Once grilled, remove the sandwiches from the skillet. Allow them to cool for a minute, then slice diagonally and serve warm.
