Pasta Preparation

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

Vegetable Preparation

    Chop the Vegetables

    While the pasta is cooking, wash and chop the zucchini, bell pepper, carrot, and asparagus into bite-sized pieces. Halve the cherry tomatoes.

Sautéing

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the chopped zucchini, bell pepper, carrot, and asparagus. Cook for about 5-7 minutes until the vegetables are tender but still crisp.

    Add Spinach and Tomatoes

    Stir in the spinach and cherry tomatoes, cooking for an additional 2-3 minutes until the spinach wilts and the tomatoes begin to soften.

Combining

    Combine Pasta and Vegetables

    Once the pasta is cooked, drain it and add it directly to the skillet with the sautéed vegetables. Toss everything together to combine well.

    Add salt, black pepper, and grated Parmesan cheese. Toss again to ensure everything is well coated with seasoning and cheese.
