    Prepare the Potatoes

    Wash and dice the medium potatoes into small cubes.

    Cook the Potatoes

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, chopped onion, salt, and black pepper. Cook until the potatoes are golden brown and tender, about 15-20 minutes, stirring occasionally.

Corned Beef

    Heat the Corned Beef

    In a separate skillet, heat the 8 oz of corned beef over medium heat until warmed through, about 5-7 minutes.

Poached Eggs

    Prepare the Water

    Fill a pot with water, add 1 tablespoon of white vinegar and 1 teaspoon of salt, and bring to a gentle simmer.

    Poach the Eggs

    Crack each egg into a small bowl. Gently slide each egg into the simmering water. Poach for 3-4 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on paper towels.

Griddled English Muffin

    Toast the Muffins

    Slice the English muffins in half. In a skillet, melt 2 tablespoons of butter over medium heat. Place the muffin halves cut-side down in the skillet and grill until golden brown, about 3-4 minutes.

Hollandaise Sauce

    Melt the Butter

    In a saucepan, melt 1 cup of butter over low heat. Once melted, set aside.

    Whisk the Egg Yolks

    In a heatproof bowl, whisk together 3 egg yolks and 1 tablespoon of lemon juice until pale and thick.

    Combine and Cook

    Place the bowl over a saucepan of simmering water (double boiler). Gradually whisk in the melted butter until the sauce is thickened. Season with salt and a pinch of cayenne pepper. Keep warm.

Assembly

    Plate the Dish

    On each griddled muffin half, layer the warmed corned beef, followed by a poached egg. Drizzle with hollandaise sauce and serve alongside home fries.
