Fried Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Mix the Breading
In a large bowl, combine the flour, cornstarch, salt, black pepper, and paprika. Mix well.

Bread the Calamari
Dip each calamari ring first into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add calamari rings to the hot oil in batches, frying for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Sauté the Garlic
Add minced garlic cloves and sauté for about 1 minute until fragrant.

Add Tomatoes and Seasoning
Pour in the canned crushed tomatoes, oregano, salt, black pepper, and sugar. Stir to combine.

Simmer the Sauce
Reduce the heat and let the sauce simmer for 15-20 minutes, stirring occasionally.

Finish with Basil
Add fresh basil to the sauce just before serving, stirring to combine.
